Vegan Strawberry Parfait

We love this strawberry parfait because it feels so luxurious and yet is so easy to literally whip up. There are very few things so delicious as fresh strawberries, so if they are available to you, go fresh. If not, you can always use frozen strawberries, or better yet, fresh blueberries or fresh berry of your choice. We use canned coconut for a thick and creamy plant-based milk alternative, but if you do not like coconut milk (gasp!), you can easily go with dairy milk (or soy, oat, almond, pea). Fresh, raw almonds can be chopped up the old-fashioned way or by a quick pulse in the Cuisinart food processor. The most important part of this recipe is the clear glass! Don’t forget, we eat first with our eyes.

 1 cup strawberries
 ¾ cup ground almonds
 1 cup canned coconut milk
 3 tbsp stevia

Whip up the chilled and firm coconut milk with the help of a hand mixer alongside with the stevia.

Dice up the strawberries into small cubes.

In serving glasses arrange some of the ground almonds, whipped coconut milk, and diced strawberries.

Repeat the same process one more time until you get at least two layers of everything.

Serve with a fresh sprig of mint and enjoy.
