Banana Bread Recipe

Orange you glad I said banana? All jokes aside, the banana has proven to be a superfood and healthy addition to your diet. There are various benefits to including bananas in your diet. For one, they contain good amounts of fiber and other nutrients like potassium, vitamin B6, vitamin C, and magnesium. They also may help for dietary reasons, digestive health, heart health and they can even help make you feel full longer. Bananas are used for several things. The leaves are used for cooking, wrapping, and food-serving, the skin of the banana can be used as a moisturizer and can fade acne scars. The banana itself can be used in many different ways, one of our favorite ways is in banana bread.

There are many different types of banana bread recipes but creating a perfect loaf of banana bread is easier said than done. Keep in mind how more ripened bananas will taste much sweeter than less-ripened bananas. You should also account for the sweetness from the chocolate in this recipe, as the milk and white chocolate will add to its sweetness. When choosing your bananas, make sure to look out for the perfect ripeness and for any bruising as this may also affect the taste.

2 cups all-purpose flour
1 tsp baking powder
pinch of salt
1 tsp ground cinnamon
3 bananas, mashed
2 large eggs, room temperature
½ cup butter, melted, or vegetable oil
1 cup granulated sugar
1 tsp vanilla extract
3 tbsp Greek yogurt
3 oz dark chocolate, chopped
3 oz white chocolate, chopped

In a large mixing bowl combine the dry ingredients first: flour, baking powder, salt, and cinnamon.

In another bowl combine the mashed banana, eggs, melted butter, vanilla extract, and Greek yogurt.

Whisk the wet ingredients and stir in the dry into the wet ingredients.

Add the chopped chocolates to the batter and transfer to a well-coated loaf pan with butter.

Top with one banana, cut in 4 pieces on top.

Bake for about 50 minutes in an already heated oven at 350 F or 180 C degrees.

Cover with aluminum foil in the last 15 minutes so your banana bread won’t burn.

Finally, sprinkle some icing sugar to decorate.
